Ingredients
2 Whole-wheat bread slices
¼ Mashed avocado
3 Tomato slices
¼ cup Parmesan cheese, grated
1 cup Salad greens (mixed or baby spinach)
2 tsp Balsamic vinegar
1 Pear, medium ripe
Directions
Place the bread on the work surface. On one slice, spread the avocado. Toss in some tomatoes and a sprinkling of cheese. For 4 to 6 minutes in a toaster oven, toast both pieces of bread until the plain piece is toasted and the cheese on the topped piece starts to melt.
With a spatula, remove the toast from the toaster oven and pile greens (or spinach) on top of the cheese side. Top with the remaining toast and a drizzle of vinegar. If preferred, cut in half and serve with pear.
