Ingredients
500g Cut-in-half baby fresh potatoes
1 tbsp Oil
2 Large courgettes, peeled and chopped into tiny bits
1 Small red pepper, cut into bits
1 Thinly chopped spring onion
25g Pine nuts
1 ½ - 2 tablespoons Pesto
Directions
Boil the potatoes for 10 minutes, or until soft. Preheat the oven to 200°C/180°C fan/gas 6 degrees.
Toss the potatoes in the oil and place them on a baking sheet. Cook for 20 minutes. Push the potatoes to the side and fill the tray with courgette, pepper, spring onion, and pine nuts. Place the salmon on the opposite side of the pan.
- Lemon juice should be squeezed over the fillets and vegetables (not including the potatoes). Season with salt and pepper.
- Return the tray to the oven for another 12-15 minutes, or until all salmon fillets are cooked.
