Ingredients
500ml Almond milk
200g Giant porridge oats
2 tbsp Almond butter
1 tsp Baking powder
1 Egg, beaten
1 Small ripe banana, mashed
½ tsp Almond extract or 1 tsp vanilla extract (optional)
450g Blueberries, with more to serve
30g Whole, skin-on almonds, roughly chopped
To serve, add milk or fat-free yogurt and honey (optional)
Directions
Preheat the oven to 200 degrees Celsius/180 degrees Celsius fan/gas 6. In a large mixing bowl, combine all of the ingredients.
- Place the mixture in a 2-liter ovenproof dish and bake for 30-35 minutes, or until the center is steaming hot. Top with a little milk or yogurt, honey, and additional blueberries.
