Ingredients
125 ml of Oat milk
2 Separated eggs
1 Banana, small
100g Rolled oats
2 tsp Baking powder
Few of drops vanilla extract
Avocado oil spray instead of oil.
Toppings: low-fat yogurt and fruit
Directions
In a blender, combine the oat milk, egg yolks, banana, oats, baking powder, and vanilla until smooth. To make firm peaks, whisk the egg whites. Fold in the remaining whites after whisking 1-2 tbsp into the batter.
Cook for 1-2 minutes, until the base sets and bubbles develop all over the top, in a nonstick pan sprayed with a little oil coating.
- Cook for an additional minute on the opposite side. Repeat in batches, checking if the top appears dry before flipping, or the center may collapse.
