Ingredients
600g Pumpkin, peeled and chopped into 2cm chunks
¼ cup (400g) Burghul
500g minced Extra-lean beef
1 Finely shredded tiny red onion
2 tbsp Finely chopped fresh mint leaves plus 1 ½ cup whole leaves
2 tsp Coarsely grated lemon rind
1 tsp Ground allspice
1 ½ tsp Ground cinnamon
2 tsp Cumin
400g Washed and drained chickpeas
1 tbsp Water
2 tbsp Fresh lemon juice
1 chopped Lebanese cucumber
250g Halved cherry tomatoes
To serve, lemon wedges
Directions
Preheat the oven to 200°C/180°C with the fan on. Place the pumpkin on a parchment-lined baking sheet. Use an oil spray. Roast for 25 minutes or until vegetables are soft.
- Place the burghul in a heatproof bowl in the meantime. Fill with boiling water and cover. Allow 10 minutes for soaking. Drain thoroughly.
In a large mixing basin, combine the burghul, mince, onion, chopped mint, rind, allspice, cinnamon, and 1 teaspoon of cumin. Season. Cut out 12 oval shapes. Apply a light coat of oil.
- Over medium-high heat, heat a large chargrill pan. Cook, occasionally rotating, for 6-8 minutes or until kibbeh is cooked through.
- In a food processor, combine chickpeas, water, 1 tablespoon juice, half the pumpkin, and the remaining cumin until smooth. Season.
- Combine cucumber, tomato, additional mint, and the leftover pumpkin and juice in a mixing dish. You can serve Kibbeh with hummus, salad, and lemon wedges.
