Ingredients
1 cup ketchup
1 finely chopped small red onion
¼ cup brown sugar, packed
2 tbsp Worcestershire sauce
2 tbsp maple syrup
2 tbsp apple cider vinegar
1 tbsp fresh parsley, chopped
2 minced garlic cloves
¼ tsp black pepper
3 tbsp bourbon, split
1 ½ pound boneless, skinless chicken breasts
2 cups fresh or frozen corn, thawed
1 cup sweet red pepper, chopped
½ cup red onion, finely chopped
2 medium limes, juiced and zested
⅛ tsp cayenne pepper sauce
½ tsp of salt
¼ tsp black pepper
8 corn tortillas (8 inches)
Cilantro, minced (optional)
Directions
In a 3-quart slow cooker, combine the first 9 ingredients and 2 tablespoons of bourbon. Turn and coat the chicken.
Cook, covered, on low heat for 3-4 hours, or until a thermometer reads 165 °F. Remove the chicken and shred it with two forks. Stir in the remaining bourbon in the slow cooker. Heat through.
Meanwhile, add corn, red pepper, onion, lime juice, lime zest, spicy sauce, salt, and pepper in a mixing bowl. Serve the chicken in tortillas topped with salsa. Garnish with cilantro if desired.
Recipe Note
By using lettuce instead of tortillas, you can cut carbs by about half. The spicy salsa goes well with the sweetness of the chicken. Adding an extra tablespoon of bourbon to the sauce makes it taste much better after the chicken is done.
