Ingredients
2 tbsp brown sugar
¾ tsp Dijon mustard
½ tsp maple syrup
⅛ teaspoon salt
2 tsp bourbon, optional
4 thickly cut bacon strips
12 big hardboiled eggs
¾ cup mayonnaise
1 tbsp maple syrup
1 tbsp Dijon mustard
¼ tsp pepper
¼ tsp ground chipotle pepper
Fresh chives, minced
Directions
Preheat the oven to 350 °F. Put the Brown sugar, 3/4 teaspoon mustard, 1/2 teaspoon syrup, and salt in a small mixing bowl. Stir in bourbon if desired.
Coat the bacon in the brown sugar mixture. Place on a rack in a 15x10x1-inch foil-lined baking pan. Bake for 25-30 minutes or until crisp. Allow to cool.
Cut the eggs in half lengthwise. Remove the yolks, leaving the whites.
Mash the yolks in a small bowl. Stir in the mayonnaise, 1 tablespoon syrup, 1 tablespoon mustard, and both types of pepper until smooth.
Fold half of the bacon into the egg yolk mixture. Spoon or pipe into egg whites. Sprinkle with the leftover bacon and chives.
Refrigerate and cover until ready to serve.
