Ingredients
½ cup melted butter
2 lbs peeled carrots, sliced into equal-sized pieces
½ tsp salt, or more to taste
½ cup bourbon whiskey
⅓ cup brown sugar
1 tsp cayenne pepper, or more to taste
Freshly ground black pepper
2 fresh thyme sprigs for garnish (Optional)
Directions
Melt the butter in a large skillet over medium-high heat.
When the butter begins to foam, add the carrots. Season with salt and simmer. Constantly stir for 5 to 6 minutes or until the carrot’s liquid evaporates, and the carrots begin to brown around the edges.
Turn the heat down to medium-low. Pour in the bourbon slowly. Cook and whisk for 2 minutes or until the bourbon is almost evaporated.
Mix in the brown sugar. Then, cook the carrots virtually through 5 minutes later.
When the carrots are nearly soft, increase the heat to medium-high for 15 to 30 seconds to thicken the glaze.
Season with cayenne pepper and black pepper to taste.
Transfer to a serving dish and, if preferred, garnish with fresh thyme leaves.
