Ingredients
1 cup pecans
¾ cup bourbon, divided
2 cups Wafer crumbs
½ cup Dutch-process cocoa powder, split
½ cup confectioners' sugar, divided
¼ cup light corn syrup
Directions
Combine the pecans and 1/4 cup bourbon in a small basin. Cover with plastic wrap and set aside for 2 to 3 hours until the pecans have absorbed part of the bourbon. Drain the bourbon and set it aside.
Preheat the oven to 325 °F.
Bake the pecans on a baking sheet for 12 to 15 minutes or until gently toasted. Allow the nuts to cool before finely chopping and setting aside.
Combine the chopped nuts, remaining bourbon, Nilla Wafers crumbs, ¼ cup cocoa powder, ¼ cup confectioners' sugar, and corn syrup in a large mixing bowl. Stir until completely smooth.
Roll dough into 34-inch balls with a heaping tablespoon of dough. Combine the remaining cocoa powder and confectioners' sugar in a separate bowl and coat each ball in the cocoa sugar.
Place the bourbon balls on a rimmed baking sheet lined with parchment paper.
Cover and chill until stiff, at least 2 hours.
