Ingredients
¾ cup bourbon
1 refrigerated cinnamon roll tube (12.4 ounces) with icing
½ cup pecans, chopped
2 tbsp maple syrup
1 tsp fresh ginger root, minced
Directions
In a small bowl, combine bacon and bourbon. Refrigerate overnight, and cover it securely. Remove the bacon and pat it dry; discard the bourbon.
Cook bacon in batches in a large skillet over medium heat until nearly crisp but still flexible. Remove to a plate lined with paper towels to drain. Remove all but 1 teaspoon of the drippings.
Preheat the oven to 375 °F. Divide the dough into 8 rolls, reserving the frosting packet. Unroll the spiral rolls into long strips; press the dough into 6x1-inch pieces.
Place 1 bacon strip on each dough strip, cut as necessary, and reroll to form a spiral. Pinch the ends together to seal. Rep with the remaining dough.
Transfer to a baking sheet lined with parchment paper and bake for 9-11 minutes until golden brown.
And meanwhile, combine the pecans and maple syrup. In a separate bowl, combine the ginger and icing packet contents.
Warm the reserved bacon drippings in the same skillet over medium heat. Cook, stirring regularly until the pecans are gently browned, about 2-3 minutes.
Drizzle the frosting over the warm cinnamon rolls and sprinkle with pecans.
