Ingredients
4 to 6 peeled and sliced sweet potatoes into ½ -inch (12-mm) thick rounds
Freshly ground black pepper and coarse salt
½ cup light brown sugar, well packed
4 tablespoons unsalted butter (½ stick) plus more for the baking dish
½ cup bourbon
2 tbsp sorghum syrup or maple syrup
Directions
Preheat the oven to 350 °F or 176 °C. Using butter, grease an oven-safe gratin or casserole dish.
Season the sweet potato slices generously with salt and pepper and arrange them in the prepared baking dish.
Combine the sugar, butter, bourbon, and syrup in a large saucepan and bring to a boil over medium-high heat. As soon as the sauce starts to boil, pour it over the sweet potatoes.
Bake for 45 to 60 minutes, turning the sweet potatoes and spooning the liquid over the top as needed until the sweet potatoes are cooked. Taste and season with salt and pepper as needed.
