Breakfast quesadillas contain the best breakfast ingredients: eggs, cheese, meat, and vegetables. And they're so versatile - you can use any combination of ingredients. Just make sure to put them between two tortillas and cook until crispy.

Ingredients
3 Bacon slices
3 Eggs
- Pepper and salt
2 Flour tortillas (burrito size)
¾ cup Shredded cheese (you can use gruyere)
1 chopped Green onion
Directions
Cook bacon in a skillet over medium heat until crisp. Transfer to a paper towel-lined plate to drain, then pour and discard the grease.
- Scramble the eggs in the same skillet as the bacon. Place on a plate and set aside.
Heat a skillet or griddle over medium heat, then spray with nonstick spray. Place a tortilla on top, then top with half the cheese.
- Layer half of the eggs, bacon, cheese, and green onion on one half of the tortilla, then fold the other half over.
- Cook and flip until each side is golden brown. Transfer to a cutting board and use a pizza slicer to cut into wedges.
- Repeat the process with the remaining ingredients.
