1 tsp Garlic clove, minced
A pinch of sea salt
1 tbsp Olive oil (extra virgin)
2 tsp. Red wine vinegar
1 tsp Ground pepper
3 cups Baby kale, lightly packed
½ cup Quinoa, cooked
½ cup Strawberries, sliced
1 tbsp. Salted pepitas
Directions
Mash the garlic clove and salt together with the side of a chef's knife or a fork to make a paste.
Combine the garlic paste, oil, vinegar, and salt in a medium mixing bowl. Toss in the kale. Quinoa, strawberries, and pepitas are served on top.
