Cauliflower Tots are great appetizers for any occasion. Not only are they delicious and flavorful, but they are healthy snacks to munch on. Serve them hot with ketchup or your favorite dipping sauce, and you’re all set!

Ingredients
4 cups Cauliflower florets, steamed
1 large Egg, lightly beaten
1 cup shredded Cheddar
1 cup freshly grated Parmesan
⅔ cup Panko breadcrumbs
2 tbsp. freshly chopped Chives
Freshly ground Black pepper
½ cup Ketchup
2 tbsp. Sriracha
Directions
Preheat the oven to 375 °F. Spritz a large baking sheet with cooking spray.
Make cauliflower rice by pulsing the steamed cauliflower in a food processor. Then, wrap the riced cauliflower in a clean cloth and squeeze to drain water.
Transfer the riced cauliflower to a bowl, then add egg, cheddar, Parmesan, Panko, and chives. Mix until well combined and season with salt and pepper
- Scoop about 1 tablespoon of mixture, roll it with your hands to form a tater-tot shape, and place it on the prepared baking sheet.
- Bake tots for 15 to 20 minutes or until golden.
- To make spicy ketchup, add ketchup and Sriracha in a small bowl and stir to combine.
- While still warm, serve the cauliflower tots with spicy ketchup.
