Ingredients
½ Cauliflower florets, cut into cubes, stalk sliced into cubes
2 tbsp Oil
100g Orzo
2 tsp Capers, washed and drained
½ Lemon, zested and juiced
1 Small garlic clove, sliced
100ml Low-salt vegetable stock (check to see if it's vegan if necessary)
A handful of rocket leaves to serve
Directions
Preheat the grill to high temperatures. Combine the cauliflower, half of the oil, and a pinch of salt and pepper. Place on a baking sheet and grill for 15-20 minutes, or until golden and seared throughout.
- In the meantime, cook the orzo for 8 minutes, or until al dente, in a pot of boiling salted water, then drain.
Heat the remaining oil and brown the capers and garlic in a frying pan. Combine the orzo, cauliflower, lemon zest, juice, and stock in a large mixing bowl.
- After 1 minute, spoon half the mixture into a bowl and top with rocket. Allow the leftovers to cool before putting them in the lunchbox.
