Ingredients
2 tbsp Rapeseed oil
1 Chopped onion
1 Thinly chopped red pepper
1 Thinly chopped yellow pepper
1 tbsp Za'atar
Chickpeas (400g) in a can
1 ½ tbsp Red harissa paste
150g Fresh baby spinach
½ Sprigs parsley, freshly chopped
Lemon wedges, to serve
Directions
In a frying pan, heat 1 tbsp oil over medium heat and cook the onions and peppers for 7 minutes, or until softened and golden.
- In the meantime, place the chicken between two sheets of baking paper and bash lightly until it is about 2cm thick. Combine the remaining oil and za'atar, then rub it over the chicken. Adjust the seasoning to taste.
Preheat the grill to high heat. Grill the chicken for 3-4 minutes per side, or until brown and cooked through, on a baking pan lined with foil.
Warm the chickpeas in a skillet with the harissa paste and 2 tbsp water, then mash with a potato masher. Wilt the spinach in a pan with 1 tbsp water or a microwave-safe dish.
- Combine the chickpeas with the pepper and onion mixture, spinach, and parsley. Serve alongside the sliced chicken and lemon wedges for squeezing.
Recipe Note
Any remaining chicken should be shredded and fried in a small amount of olive oil until warm and crisp around the edges. The pita bread is halved and toasted, then filled with hummus, chicken, lettuce, and tomatoes.
