If he dislikes yam, this coconut-bourbon sweet potato recipe will persuade him otherwise. The bourbon adds a rich depth of flavor to the potatoes, while the coconut adds a creamy sweetness. With just a hint of spice, these sweet potatoes are sure to please even the most skeptics.

Ingredients
8 cup sweet potato mashed
¾ cup cream, half-and-half
½ cup brown sugar, packed
½ cup bourbon
2 large eggs
¼ cup honey
3 tsp. vanilla extract
1 ¼ teaspoon cinnamon powder
¼ tsp of salt
1 tbsp optional molasses
Optional: ½ teaspoon ground cardamom
1 cup shredded sweetened coconut
¾ cup golden raisins
1 ½ cup small marshmallows
½ cup regular flour
½ cup brown sugar, packed
1 tsp cinnamon powder
⅓ cup melted butter
1 cup pecans, chopped
Directions
In a large mixing bowl, combine the first nine ingredients; add molasses and cardamom if preferred.
Stir in the coconut and raisins.
Place in a greased 13x9-inch baking dish; top with marshmallows.
Combine the flour, brown sugar, and cinnamon in a small bowl.
Mix in the butter until it is crumbly. Sprinkle with pecans and marshmallows.
Bake, uncovered at 350 °F for 35-40 minutes, or until heated through and the topping is golden brown.
