2 tbsp Toasted sesame oil
1 tbsp Fresh ginger, grated
3 tbsp Fresh lime juice (from about 2 limes)
Kosher salt with black pepper
10 oz Snap peas, stringed and finely sliced
4 oz. Finely sliced snow peas
2 Finely sliced scallions
2 Boneless, skinless chicken breasts (8 oz.)
1 tbsp Oil
2 tbsp Coconut cream
½ cup Cilantro
Directions
Whisk together sesame oil, ginger, 1 ½ teaspoons lime juice, and ½ teaspoon salt in a large mixing bowl. Toss in the snap peas, snow peas, and scallions to blend.
Cut each breast horizontally to produce 4 thin cutlets, then pound to a thickness of 1/4 inch. Heat the oil in a large skillet over medium-high heat.
- Cook in batches until golden brown and cooked through, about 2 minutes per side, seasoning with 1/2 teaspoon salt and pepper.
- As the chicken cooks, transfer it to plates. Remove the pan from the heat and whisk in the coconut cream and the remaining 1 1/2 tablespoons lime juice, scraping any browned bits away with a spatula. Plate the chicken with the sauce.
- Serve the cilantro-pea mixture on top of the chicken.
