Ingredients
1 pc. Canadian bacon
¼ cup Egg substitute
1 tbsp. Salsa
1 tbsp. Shredded reduced-fat cheddar cheese
1 whole Wheat English muffin, split and toasted
Directions
In a medium pan, toast the English muffin side by side until it's golden brown. Don't over-toast it. Set aside.
Heat a nonstick skillet or cast iron pan over medium heat and add Canadian bacon. Cook until crispy and place on paper towels to drain excess grease.
- In a small bowl, combine egg substitute and salsa until evenly mixed and set aside.
- On the bottom half of the English muffin, spread the egg mixture, followed by 2 tablespoons of cheese, Canadian bacon, and salsa.
- Top with the remaining 2 tablespoons of cheese and slice in half diagonally to make two triangles.
- Place on a plate and serve with spinach leaves on top!
