Ingredients
1 tbsp oil
1 large red onion
1 tbsp brown sugar
¼ tsp salt
black pepper, freshly ground
1 tbsp bourbon
1 ½ tsp unsalted butter
4 tbsp unsalted butter
12 oz. preferred cheese (we used sharp cheddar and Gruyère)
¼ cup finely chopped green onions
8 slices of crusty bread
Directions
In a large skillet, heat the 1 tbsp oil over medium heat. Cook, stirring regularly, for 20 minutes, or until the onion is caramelized and very soft. Add the sugar, salt, and pepper, and mix well.
Scrape up all the brown bits from the bottom of the skillet with the bourbon. Keep heated by stirring in 1 ½ teaspoon butter until melted. This recipe yields around 1 cup.
Toss the cheeses in a medium mixing basin until well blended. Divide into four equal amounts and shape each into a disk-like patty to fit the bread slices.
Spread 1/4 cup of the onion mixture on each of the four slices of bread. Add a cheese patty and another slice of bread to each. 1 ½ teaspoon butter, spread over one side of each sandwich
Over medium-low heat, heat a large nonstick skillet. Place two sandwiches in a pan, butter side down.
Cook until golden brown, about 3 to 4 minutes. Spread 1 1/2 teaspoon of butter on the second side of each sandwich while the first side is cooking.
Cook for another 3 to 4 minutes until the second side is crispy and golden brown and the cheese has melted. Prep with the other two sandwiches.
