Ingredients
4 cups Stock (as specified in the notes)
¼ cup Freshly squeezed lime juice
¼ cup Cilantro
2 Ripe avocados (skin and seeded)
2 Green onions, only the green section
1 teaspoon Coarse sea salt
¼ tsp Cumin powder
Toppings include chopped avocado, toasted pepitas, hot sauce or chile oil, croutons, crispy bacon, and cilantro.
Directions
In a blender, combine all ingredients and blend on high until smooth. If desired, season with additional salt.
- Pour the soup into a pot and heat it gently on medium heat if you want it warm. Don't let it come to a boil.
- Serve with any of the alternative toppings or on its own.
- Optional additions include diced avocado, toasted pepitas, hot sauce or chile oil, croutons, crispy bacon, and cilantro.
Recipe Note
You can use bone broth in any soup recipe, including this one. If you use vegetable broth, season it with extra salt.
