Ingredients
1 tbsp Rapeseed oil, cold-pressed
1 Red onion, sliced into thin wedges
1 thinly Chopped red pepper
1 thinly Chopped yellow pepper
3 Smashed big garlic cloves
1 tsp Cumin seeds
1 tsp Crushed coriander seeds
1 tsp Sweet smoked paprika
400g Cherry tomatoes, canned
115g Fresh baby spinach
4 Large eggs
½ Coriander leaves, roughly chopped
½ Bunch dill, coarsely sliced
Directions
A large nonstick frying pan is used to heat the oil. Fry for 8-10 minutes over medium heat until the vegetables are softened.
- Cook for an additional minute after putting in the garlic, cumin, coriander, and paprika. Cook, uncovered, for 10 minutes after adding the tomatoes, spinach, and 100ml water. Taste and adjust seasonings.
- Make four indentations in the tomato mixture, one for each egg. Cook for 8-10 minutes, or until the eggs are just set, covered with a lid or foil. Serve after uncovering and sprinkling with fresh herbs.
