This healthy sheet-pan tilapia and vegetable dinner is quick, easy, and loaded with flavor. Tilapia, broccoli, asparagus, zucchini, and carrots are baked in one pan in under 25 minutes.
The tilapia is seasoned with garlic and spices, and the vegetables are roasted to perfection. This healthy meal is perfect for busy weeknights or anytime you want a delicious and nutritious meal.

Ingredients
2 medium Yukon Gold potatoes, peeled and sliced
3 large, Thinly sliced fresh Brussels sprouts
3 large, Thinly cut radishes
1 cup Fresh sugar snap peas, peeled and cut into 1/2-inch pieces
1 Finely sliced small carrot
2 tbsp Melted butter
½ tsp Garlic salt
½ tsp Black pepper
2 Fillets of tilapia (6 ounces each)
2 tsp Fresh tarragon, chopped, or 1/2 tsp dried tarragon
⅛ tsp of Salt
1 tbsp Softened butter
Lemon wedges and tartar sauce are optional
Directions
Preheat the oven to 450 degrees Fahrenheit. Foil-line and grease a 15x10x1-inch baking pan. In a large mixing bowl, mix the first 5 ingredients. Toss in the melted butter with the garlic, salt, and pepper.
- Cook until potatoes are cooked, about 20 minutes, in a single layer in a preheated pan. Preheat the broiler after taking the dish out of the oven.
- On one part of the sheet pan, put and arrange vegetables. On the other side, add the fish. Dot with softened butter and tarragon. Broil the fish for 5 minutes, or until it flakes easily with a fork. Serve with tartar sauce and lemon wedges, if desired.
Recipe Note
- Instead of tarragon, use any mild herb, such as dill, chervil, or parsley.
- A quick roast softens radishes and helps to lessen the harsh flavor that some older radishes may have.
