Ingredients
¼ cup Finely sliced red onion, cut into rings
1 14-ounce Washed and finely chopped can of artichoke hearts
1 Medium seeded and sliced tomato
2 tbsp Balsamic vinaigrette
1 tbsp Olive oil (extra virgin)
1 tsp. Dried oregano
1 Baguette, 16 to 20 inches long, preferably whole-grain
2 Half slices of provolone cheese (about 2 ounces)
2 cups Romaine lettuce, shredded
¼ cup Pepperoncini, sliced (optional)
Directions
Fill a small basin halfway with cold water and add the onion rings. Set aside while you finish up the rest of the ingredients.
- Combine the artichoke hearts, tomato, vinegar, oil, and oregano in a medium mixing dish. You should cut the baguette into four equal lengths. Pull about half of the soft bread from each side after splitting each slice horizontally. Drain and dry the onions.
- Assemble the sandwiches by dividing provolone among the bottom baguette slices. Top with the onion, lettuce, pepperoncini, if using, and then the artichoke mixture. Cover with the tops of the baguette slices. Serve right away.
