Ingredients
2 tbsp Rapeseed oil
3 Onions, 2 1/2 thinly sliced, and 1/2 finely chopped
1 tbsp Curry paste from Madras
500g Halved cherry tomatoes
1 Deseeded and finely chopped red chili
Small-pack coriander, roughly chopped
8 Large beaten eggs
1 Avocado, peeled, stoned, and cubed
1 Lemon, juiced
Directions
In a medium nonstick ovenproof frying pan, heat the oil. Cook for about 10 minutes over medium heat until the onions are tender and golden. Fry for another minute after adding the Madras paste, then add half of the tomatoes and half of the chili. Cook until the sauce has thickened and all of the tomatoes have burst.
Preheat the grill to a high temperature. Season the eggs with half of the coriander, then pour over the spicy onion mixture. Cook for 8-10 minutes over low heat, stirring once or twice, until almost set. Grill for 3-5 minutes or until done.
In a mixing bowl, combine the avocado, remaining chili and tomatoes, chopped onion, remaining coriander, and lemon juice, season to taste, and serve with the frittata.
