1 tbsp Extra virgin olive oil
1 pack Lean ground turkey (20 ounces)
2 medium Zucchini, cut into ½ -inch slices after quartering lengthwise
1 medium Sliced onion
2 Seeded and sliced banana peppers
3 minced Garlic cloves
½ tsp Dried oregano
1 Can (15 ounces) rinsed and drained black beans
1 Can (14.5 oz) chopped tomatoes, undrained
1 tbsp. Balsamic vinegar
½ tsp of Salt
Directions
Heat the oil in a large skillet over medium-high heat.
- Cook, stirring occasionally, for 10-12 minutes, or until turkey is no longer pink and veggies are cooked, breaking up turkey into crumbles; drain.
