Ingredients
2 tbsp Oil
1 Large coarsely chopped onion
2 Finely sliced celery stick
1.4 Liters of vegetable stock
2 Small lemons, juiced and zested
170g Orzo
120g Peas, frozen
250g Spinach, frozen
50g Pesto
To serve, garlic flatbreads (optional)
60g Grated parmesan (or vegetarian substitute)
Directions
Heat the oil in a big skillet and sauté the onion, celery, and a pinch of salt for 8 minutes, or until the vegetables are soft. Season with salt and pepper.
- Cook for 5 minutes after adding the orzo, then 5 minutes after adding the peas and spinach. Season after swirling the pesto.
If using, heat the flatbreads as directed on the package. Place a handful of parmesan on top of each bowl of soup. Dip the flatbread into the sauce.
