Ingredients
3 Egg whites and 2 whole eggs
1 tbsp Oil
1 De seeded and coarsely chopped red pepper
2 Spring onions, finely cut, white and green sections kept separate
A few wafer-thin extra-lean ham slices, shredded
25g Mature reduced-fat cheddar
To serve, wholemeal bread (optional)
To serve, 1-2 chopped fresh tomatoes (optional)
Directions
Set aside the eggs and egg whites, along with some spice. In a medium nonstick frying pan, heat the oil and sauté the pepper for 3-4 minutes.
- Cook for another minute after adding the white sections of the spring onions. Cook the eggs over medium heat until they are almost entirely set.
Continue to cook until the ham and cheese are barely set in the center, or if you prefer it well done, flash it under a hot grill. Serve immediately from the pan, garnished with the green part of the spring onions, sliced tomato, and wholemeal toast, if desired.
