Ingredients
¼ cup Soured cream
¾ tsp grated Lime zest
¼ teaspoon Cumin powder
½ teaspoon of Salt
2 tbsp. Canola oil, divided
2 minced Garlic cloves
2 Cans (15 oz. each) of washed and drained pinto beans
1–2 tsp Spicy pepper sauce
1 tsp. Chili powder
6 Corn tortillas (6 inches)
2 cups Chopped lettuce
½ cup Salsa
¾ cup Feta or queso fresco crumbled
Slices of lime
Directions
Combine sour cream, lime zest, cumin, and ¼ teaspoon salt in a small bowl. Heat 1 tablespoon of oil in a large saucepan over medium heat.
- Cook and add garlic. Stir for 45 seconds, or until garlic is aromatic. Heat through, stirring the beans, pepper sauce, chili powder, and remaining salt periodically.
Brush the leftover oil on both sides of the tortillas. Preheat a large skillet to medium-high. Cook, in two batches, until lightly browned and crisp, about 2-3 minutes per side.
- To serve, layer beans, lettuce, salsa, sour cream mixture, and cheese on tostada shells. With lime wedges on the side.
