Ingredients
2 cloves Garlic
2 tbsp. Extra virgin olive oil
- 2 tbsp. Water
1 can Chickpeas, drained and rinsed
⅔ cup Pumpkin puree
1 tbsp. Maple syrup or Honey
½ teaspoon fresh Rosemary, finely minced
Roasted pumpkin seeds, for garnish (Optional)
- Sprigs of fresh herbs, for garnish (Optional)
Directions
Pour olive oil into a small saucepan over low to medium heat, then add the peeled and slightly crushed garlic. Simmer for 15 to 20 minutes.
In a blender or food processor, combine water, chickpeas, pumpkin puree, maple syrup (or honey), and puree until smooth, adding more oil or water as needed.
- Add the minced rosemary and mix until well combined.
Transfer the hummus to a soup bowl and garnish with roasted pumpkin seeds and fresh herbs, if desired.
Serve with roasted garlic and your favorite pita bread, wheat toast, warm naan, crackers, apple slices, or fresh veggies.
