Salmon-Stuffed Avocados Recipe
Salmon-Stuffed Avocados are a wonderful and healthy dinner that is simple to prepare. Canned salmon is an essential pantry staple and a convenient method to consume heart-healthy omega-3-rich seafood in your diet.
Salmon is packed in protein and healthful fats, making it ideal for stuffing into avocados. Avocados are also high in fiber and healthy fats. This no-cook dish is ideal for hectic weeknights or whenever you need a quick and healthy meal.
½ cup Celery, chopped
2 tbsp Fresh parsley, chopped
1 tbsp Lime juice
2 tsp Mayonnaise
1 tsp Dijon mustard
⅛ tsp of Salt
⅛ tsp Ground pepper
2 cans (5 oz.) Salmon, drained, flaked, skin, and bones removed
Garnish with chopped chives
Combine yogurt, celery, parsley, lime juice, mayonnaise, mustard, salt, and pepper in a medium mixing bowl. Mix in the salmon thoroughly.
Remove the pits from avocados and cut them in half lengthwise. Fill a small bowl with roughly 1 tablespoon of flesh from each avocado half. With a fork, mash the scooped-out avocado flesh and incorporate it into the salmon mixture.
- Spoon about ¼ cup of the salmon mixture into each half of the avocado, mounding it on top of the halves. If desired, garnish with chives.
