Ingredients
½ tbsp Olive oil, prepare an additional small amount for drizzling
½ Chopped small onions
½ Small red pepper piece, thinly sliced
1 Garlic clove, peeled and halved
½ tsp Smoked paprika
2 tsp Red wine vinegar
210g Drained butter beans or chickpeas
¼ tsp Sugar
1 Seeded bread slice
A few finely chopped parsley sprigs
Directions
Heat the oil in a small non-stick pan and cook the onion and pepper until tender, 10-15 minutes. Half of the garlic should be crushed and added to the pan with the tomatoes, paprika, vinegar, beans, sugar, and spice. Cook and, occasionally stirring, for 10-15 minutes or until somewhat reduced and thickened.
- Toast the bread, and rub it with the remaining garlic and a little oil. Spread the beans on the toast, sprinkle with a little extra oil, and top with parsley.
