Ingredients
75g Quinoa
400g Drained can of black beans
½ tsp Cumin powder
½ tsp Ground coriander
1 Lime, zested and juiced, with additional wedges for serving
1 tsp Cider vinegar
160g Halved cherry tomatoes
1 Small stoned, peeled, and coarsely chopped avocado
2 tbsp Coriander, finely chopped
½ Tiny red onions or 3 spring onions, finely chopped
Rapeseed oil for frying.

Directions
Bring the quinoa to a boil in a small saucepan with 250ml water. Turn down the heat, cover, and simmer for 15 to 20 minutes or until the water is gone. The grains have doubled in size. Stir occasionally until the grains are soft and mushy (drain any remaining water).
Combine the beans, spices, lime zest and juice, and vinegar in a mixing bowl. Stir in the tomatoes, avocado, coriander, and onion, then divide among plates.
Heat a drop of oil in a nonstick frying pan and fry the eggs until the whites are set with a crispy edge and the yolk is still runny. Serve the quinoa with the eggs on top.
