Ingredients
2 cups fresh or frozen peeled sliced peaches, thawed
2 tbsp. bourbon, optional
¼ cup melted butter
½ cup brown sugar, packed
½ cup softened butter
¾ cup sugar
1 large egg
1 tsp vanilla extract
1 ¼ cup all-purpose flour
1 ¼ tsp baking powder
¼ tsp of salt
½ cup 2% milk
Directions
Preheat the oven to 350 °F. If preferred, mix peaches and bourbon; set aside for 10 minutes.
Meanwhile, melt 1/4 cup butter in a 10-inch cast-iron or an ovenproof pan for 5-7 minutes or until the butter is melted. Evenly sprinkle brown sugar over the butter. Arrange peach slices on top of the brown sugar.
In a large mixing bowl, cream butter and sugar until light and fluffy, about 5-7 minutes. Mix in the egg and vanilla extract.
Whisk the flour, baking powder, and salt in a separate bowl. Add to the creamed mixture alternately with the milk until incorporated. Distribute batter evenly over peaches.
Bake for 40-45 minutes or until a toothpick inserted into the center comes clean.
Allow for 5 minutes to cool before flipping onto a serving platter. Serve hot.
