Ingredients
1 tbsp Oil
1 Sliced garlic clove
1 Deseeded and coarsely diced red chili, plus more to serve (optional)
1 tbsp Drained capers
A small handful of finely chopped parsley (stalks included)
145g Tuna, drained in spring water
90g Baby spinach or rocket leaves
Directions
Cook the spaghetti noodles in a large pan of salted water for 9 to 11 minutes, or until al dente.
Put the oil over low heat in a large frying pot and slowly sauté the garlic and chili to infuse the oil. If the garlic turns darker than light golden, remove it from the fire before it becomes bitter.
Empty the water of the pasta and add it to the frying pan, keeping a cup of the cooking water.
- Toss the pasta in the oil with a splash of pasta water over low heat to emulsify and coat the spaghetti. Add the capers, parsley, tuna, and spice.
- Stir gently, as you want the tuna chunks to remain intact. Toss the spaghetti with the rocket and lemon juice, then serve with additional chili on top if desired.
