The bourbon-infused vinaigrette gives the salad a warm, slightly sweet flavor, while the bacon and blue cheese add welcome richness. And for a bit of crunch and zing, we've added green apples and breakfast radishes.

Ingredients
¼ cup bourbon
¾ cup olive oil
2 tbsp apple cider vinegar
1 tbsp maple syrup
¼ tsp sea salt
½ tsp freshly ground black pepper
9 slices of bacon
8 ounces of fresh spinach
½ cup pecans
1 radish for breakfast
4 oz mild blue cheese
Directions
Bring the bourbon to a boil in a small saucepan over medium heat. If the bourbon's alcohol ignites, swiftly cover the pot with a tight-fitting lid to smother the flame; then remove the lid.
Cook for 3 to 4 minutes until the liquid has been reduced to about 2 tablespoons. Transfer to a ramekin and chill until thoroughly cooled.
Whisk together the olive oil, vinegar, syrup, salt, pepper, and reserved bourbon in a small bowl. Place aside.
Cook bacon in a small skillet over medium-low heat until crispy, 5 to 6 minutes. Transfer to a plate lined with paper towels. Place aside.
Mix spinach, pecans, apple, radish, blue cheese, and reserved bacon in a large mixing basin.
Gently toss with reserved vinaigrette.
