Ingredients
2 tbsp. Vegetable oil
1 (12 oz.) pack of Firm tofu, drained
¾ cup canned Fire-roasted tomatoes, drained
1 medium Red bell pepper, diced
½ medium Yellow onion, diced
2 Cloves garlic, minced
1 ½ tbsp. Nutritional yeast
1 ½ tbsp. Soy sauce
½ tsp. Red pepper flakes
½ tsp. Paprika
¼ tsp. Ground turmeric
- Salt to taste
1 tbsp. Vegan mayonnaise
5 Sandwich buns, split
1 cup Fresh spinach
1 Avocado, sliced
Directions
In a large pan over medium heat, add the oil.
Crumble the tofu into 1-inch pieces and add to the pan. Cook for 5 minutes, stirring occasionally.
- Add the canned tomatoes and cook until the excess liquid has evaporated for 5 to 10 minutes.
- Add and cook the bell pepper and onion until translucent for about 5 minutes.
Combine the garlic, nutritional yeast, soy sauce, red pepper flakes, paprika, turmeric, and salt in a mixing bowl. Cook and stir for another 2 minutes.
- Top sandwich buns with mayonnaise, tofu mixture, spinach, and avocado.
