Chicken is a versatile dish you can prepare in various ways. However, bourbon chicken is a special recipe perfect for Father's Day. The meat is marinated in bourbon, pineapple juice, BBQ sauce, Worcestershire sauce, garlic, and pepper, allowing it to absorb the flavors.
If you have the time, marinate the chicken for at least 24 hours, but up to 2 days if you have the time. When the chicken is done, rub it with some additional BBQ sauce.

Ingredients
2 cups bourbon
2 cups pineapple juice, unsweetened
1 cup hoisin sauce
2 tbsp fresh ginger root, minced
2 tbsp coarsely ground pepper (divided)
4 tsp Worcestershire sauce
8 minced garlic cloves
1 tbsp kosher salt, divided
5 pounds skinless, boneless chicken thighs
1 cup sweet red pepper, sliced
1 cup yellow onions, sliced
2 tbsp olive oil
Directions
In a mixing bowl, combine the bourbon, pineapple juice, hoisin sauce, ginger, 1 tablespoon pepper, Worcestershire sauce, garlic, and 1 teaspoon salt. Place the chicken in a shallow dish.
Pour in half of the marinade and turn to coat. Cover and place in the refrigerator overnight, turning occasionally.
Refrigerate any remaining marinade.
Remove the chicken from the marinade and set it aside. Grill the chicken over medium-high direct heat until a thermometer reads 170 °F, 5-6 minutes on each side.
In the meantime, mix the pepper and onion pieces with the remaining salt and pepper.
Grill until soft, about 5-7 minutes, turning regularly.
Cook reserved marinade in a small skillet on the grill over medium heat, stirring periodically, until slightly thickened, about 10 minutes.
Grilled pepper and onion, chopped. Serve with sauce, and sprinkle over the chicken.
Recipe Note
It's necessary to use coarsely crushed pepper. Any finer and pepper flavor will be overbearing. If finely ground pepper is all you have, reduce the amount by one-third.
