Ingredients
2 cups Shredded zucchini, drained
½ cup Egg substitute or 2 large lightly beaten eggs
¾ cup All-purpose flour
¼ teaspoon Salt
2 cups Part-skim mozzarella cheese, shredded
½ cup Parmesan cheese, grated
2 small Halved and sliced tomatoes
½ cup Red onion, chopped
½ cup Bell pepper, julienned
1 tsp. Dried oregano
½ tsp Dried basil
Optional: chopped fresh basil
Directions
Preheat the oven to 450 degrees. In a mixing bowl, combine the first four ingredients. Stir in ½ cup mozzarella cheese and ¼ cup Parmesan cheese. Spread to an 11-inch circle on a 12-inch pizza pan, sprayed generously with cooking spray.
- Bake for 13-16 minutes or until golden brown. Reduce the oven temperature to 400 degrees. Top with the remaining mozzarella cheese, tomatoes, onion, pepper, herbs, and Parmesan cheese.
- Bake for 10-15 minutes, or until the edges are golden brown and the cheese has melted. If preferred, top with chopped fresh basil.
